Eggplant with potatoes

* 5 eggplants
* 2 onions
* 7 cloves of garlic
* 7-8 peppers (some can be hot)
* 1 cup of olive oil
* 2-3 potatoes
* 4 tomatoes
* 1 cup of hot water
* salt

Peel the potatoes and cut them into cubes. Put it in a bowl, add a little salt and press it a little and leave it to wait a little.
Chop the onions as for a dish, clean the garlic, chop the peppers. Put everything in a pot, add olive oil and fry. Add the potatoes and continue to fry. Peel the tomatoes, cut them into large cubes. Rinse the eggplants and then add them to the pot. After frying a little, add hot water. After boiling, lower the heat. Close the lid of the pot and let it boil until the potatoes are soft. (where the potatoes are baked, that is, the eggplants are also done). At the end, add the salt. When you serve, do not stir them, be careful not to crush the eggplants.
